Have you ever tried turnips? Our CSA farmer has fresh turnips every summer in our share and I learned to love them quickly. The first year of the CSA I had no idea what to do with these. I remember running home to Brandon’s stepdad and asking him to help me cook them. I found out quickly that these little babies are super easy to cook and have a fantastic flavor all on their own. Think something of similar texture to a potato (a bit harder and more dense) but the brightness of a carrot and a touch of sweetness.
I love just about any recipe that involves balsamic vinegar and I thought they would be delicious if they were roasted with a savory flavor because of their natural sweetness on their own.
Step by Step to Delicious Turnips
The first step is to chop up the turnips into about 1/2 inch pieces. If all of your turnips are relatively the same size this should be easy. Just continue cutting the pieces in half until they are the correct size. You can shop the greens off and use them for another recipe like this one.
Next, mix together the balsamic vinegar, olive oil and italian seasoning. Use a bowl big enough to fit the turnips also because that leads us to our next step.
Toss the turnips in your ready-made marinade and make sure they get evenly coated.
Dump your entire mixture on a sprayed cookie sheet or you can use a silicone baking sheet like I did (See what I have to say about the Silpat here). Bake at 425 degrees for 12-15 minutes. They should be fork tender when they are finished.

These delicious Italian Turnips are roasted in italian seasoning and balsamic vinegar for an amazing savory veggie side you won't be able to resist.

- 3-4 medium sized turnips
- 2 Tablespoons balsamic vinegar
- 2 Tablespoons olive oil
- 1 Tablespoon Italian Seasoning
- 1/2 teaspoon of coarse salt
- 1/4 teaspoon ground pepper
- Heat oven to 425 degrees Fahrenheit. Chop turnips into 1/2 inch pieces. Mix together vinegar, olive oil, italian seasoning, salt and pepper in a medium sized bowl. Toss turnips in mixture, covering completely.
- Dump contents onto a greased baking sheet or a silicone baking mat. Spread out evenly so the turnips are not touching. Place in the oven and cook for 12-15 minutes or until the turnips are fork tender.
- Eat them as a snack or use them as a veggie side dish! Enjoy!
- You can use any variety of turnip for these. Mine are Japanese turnips grown locally by an organic farmer in our area.
